Homemade Mayonnaise with Olives from Spain – Three Ways

Ingredients:

Mayonnaise base
 2 large egg yolks, room temperature
 ½ tsp salt
 1 tsp Dijon mustard
 2 tbsp lemon juice
 1 ½ cups extra virgin olive oil, refrigerated

Preparation:

Mayonnaise base

Mix the egg yolks, salt, mustard and lemon juice in a large bowl.

Start beating the mixture with a hand mixer while slowly adding the oil in a constant thin stream.

When all the oil is incorporated, the mayonnaise should be thick and emulsified.

Gordal olive mayonnaise

Mix ½ cup of the mayonnaise base with:

• ¼ cup green Gordal olives from Spain, chopped
• Zest of ½ lemon
• ½ tsp turmeric
• 1 tsp chopped fresh cilantro
• Salt and pepper to taste

Manzanilla olive mayonnaise

Mix ½ cup of the mayonnaise base with:

• ¼ cup pimiento-stuffed green Manzanilla olives from Spain, chopped
• 2 tsp of paprika
• 2 tsp pimiento, chopped
• Salt and pepper to taste

Hojiblanca olive mayonnaise

Mix ½ cup of the mayonnaise base with:

• ¼ cup black Hojiblanca olives from Spain, chopped
• ½ tsp garlic powder
• 2 tbsp grated Manchego cheese
• 1 tbsp lemon juice
